I don’t know about you but there is something about the months leading up to fall. The anticipation of the cool, crisp air, the excitement to see the leaves changing color, or maybe it’s the flavors and recipes that just bring a whole different level of coziness to the table.

I think the constant sweating, AC bills, and lack of holidays may have something to do with it, so if you are starting to crave a Summerween night or the bite of the cool air against your face here are a couple of recipes you may be able to enjoy on the cooler nights to help ease that itch.

Breakfast

There are a couple things I believe are only meant to be made during the Fall Season because that’s what makes it so special. Not being able to go to the coffee shop year-round and order a Pumpkin Spice Latte is the reason that it tastes so much better when it finally shows up on that menu.

However, if you just can’t wait and you disagree with everything I just said, I get it so,

1. Pumpkin Spice Latte

The Best Pumpkin Spice Latte

I came across this recipe last year when I was feeling a little extra pumpkin spicey but didn’t feel like spending the money every day to pick one up at a cafe.

It’s a quick recipe that only requires a couple of ingredients

  • Strong hot coffee or 2 shots of espresso
  • Your milk of choice, dairy or non-dairy
  • Pumpkin puree
  • Sugar or maple syrup
  • Vanilla extract
  • Pumpkin pie spice
  • Whipped cream, optional for serving

Once you have all your ingredients your pumpkin spice latte from scratch should come together in less than 10 minutes.

If you are like me and prefer cold coffee no matter what the weather is, pour your finished latte over ice and top it with whipped cream and you can even shave some fresh cinnamon on top or maybe sprinkle on a little extra pumpkin pie spice and you will be good to go.

2. Maple Bacon Sweet Potato Hash

Fall typically is headed by very sweet pastries and I think the other recipes often get overlooked despite how delicious they are and this is one of them. This is such an easy recipe that is quite budget-friendly and doesn’t require anything beyond beginner skills in the kitchen.

I will make some version of this year-round, sometimes making it spicy rather than sweet but the original Maple Bacon Sweet Potato Hash recipe is one that I hope makes its way into everyone’s kitchen this year.

If you feel like giving it a try, here are the ingredients needed to get you started;

  • 2-3 Medium sweet potatoes
  • Ground Cinnamon
  • Maple Syrup
  • Bacon

This recipe will come together in roughly 20-30 minutes and will last 4-5 days in an air-tight container in the fridge making it the perfect leftover.

Lunch/Dinner

During most seasons I feel like Breakfast is where the recipies shine. Blueberry pancakes or Smoothie bowls in the Summer. Pastries in the winter but Fall comfort food makes me think of lunch and dinner, all the soups, baked dishes, and crockpot dinners are enough to make my mouth water.

So where better to start than a cheesy soup?

3. Broccoli Cheddar Soup

This is another recipe that comes together in roughly half an hour.

Broccoli cheddar soup has been my absolute favorite for as long as I can remember. If you want to make it feel like fall you could even pick up a fresh loaf of bread from your local grocery store and hallow it out to create a bread bowl for your soup.

Although I will never be able to do that again without thinking about the video of chefs watching people do that to their fresh loafs of bread but at the end of the day, there’s a reason it’s so common.

It’s delicious.

So, what will you need to make this delicious soup?

  • Butter
  • Yellow onion
  • 1 large clove of garlic
  • All-purpose flour
  • Low Fat Milk
  • Low-sodium chicken broth
  • Heavy cream
  • Broccoli
  • Sharp cheddar cheese
  • Parmesan Cheese
  • Salt
  • Ground black pepper

I have also in the past added potato to make this a bit more of a hearty soup.

To do this before beginning the recipe;

  • Fill a medium to large saucepan 2/3 of the way and bring to a boil, make sure to salt the water
  • Peel and cube 2-3 potatoes
  • Add potatoes to the water and boil for about 12 minutes until desired softness. (Cook them fully because they will not be cooked again later.)
  • While the potatoes are cooking begin the recipe as directed
  • Drain the potatoes
  • Mix potatoes into soup after the cheese is fully melted then serve and enjoy.

The recipe will make roughly enough for six servings so it is great whether you have a partner, family, or it’s just you and you are looking for an easy and delicious meal that will have plenty of leftovers to get you through the week.

4. Crack Chicken Stuffed Potatoes

Baked potatoes are another staple dish when fall arrives

  • Russet Potatoes 4-6 potatoes
  • Boneless skinless chicken breast (2-3 breasts)
  • Ranch seasoning mix
  • Brick of cream cheese
  • Bacon
  • Sharp Cheddar Cheese
  • Optional, for topping: Extra bacon, chopped chives, Ranch dressing drizzle, blue cheese crumbles

I prefer to half the recipe if I am going to be making this just for myself as it is best served fresh. However, if you do happen to have leftovers I prefer to separate the filling and potato and store separately.

Wrap the potato in foil and place in an air-tight container in the fridge and place the filling in a seperate container in the fridge. Try to consume within 1-2 following days. You can reheat them by placing it back in the oven, mircrowaving it or popping it in the air fryer.

5. Pumpkin Rissoto with Bacon Parmesan

If you are looking for a bit of a challenge, trying to impress a date, or just spending the night with yourself, grab a bottle of white wine, pop that cork out and throw on a playlist old-school music will forever be my favorite when I am looking for the cold weather vibes, you can find my current favorite here) and get cooking.

Rissoto is a labor of love, it takes time and constant attention to get it just right. I went through a phase when I was around 11 where I was making it as often as my parents would get me the ingredients. Once you have it down it becomes such a great base for so many flavors. You can have sweet or savory leaning dishes and it pairs well with so many dishes and drinks.

Where to begin;

  • Bacon
  • Small onion
  • 1Vegetable or Chicken stock
  • Pumpkin Puree
  • Thyme sprigs
  • Kosher salt
  • Black pepper (freshly ground)
  • Arborio rice
  • White wine
  • Butter
  • Honey
  • Parmesan cheese

Make sure you take your time and don’t rush the steps. It is an extremely flavorful and delicious meal and is well worth the time just make sure you are in the mood to cook and with a little patience, this can be a great dinner option.

6. Jack Skellington’s Haunted White Russian

It’s the perfect way to end both an article and a night, a spooky drink.

This drink uses a homemade brown sugar syrup made with;

  • Brown Sugar
  • Pumpkin Butter (optional)
  • Pumpkin pie spice
  • Vanilla Extract

To create the rest of the drink you will need

  • Vodka
  • Kahlua
  • Espresso or Black Coffee
  • Vanilla spice syrup
  • Half and Half or Cream

If you are not a fan of the boozy sips then there is also an alternative Mocktail recipe!

To Make a Mocktail: Fill your glass with ice. Add 2 ounces apple cider or apple juice, 2 shots of espresso (about 2 ounces), and 1-2 ounces of the syrup. Stir. Add the half and half and stir again to combine. Garnish with cinnamon, if desired.
